“Chq’ul” (pronounced ‘CH-KOOL’) means "the mountain" in the native Mam language of the Gomez family. The land receives 60-70 inches of water every year, and has a natural water spring on the small 2 hectare farm located in the Sierra de los Cuchumatanes. Armando Gomez' grandfather, Eusebio Gomez was the owner of the farm at Chq’ul. Armando Gomez started working with his grandfather when he was 23 years old. After his grandfather’s passed away, his sons took over the farms while Armando continued to work on the farm. It was not until 1995 that Armando Gomez was able to start buying the farm from his uncles and aunts. The entire family is involved with the production of coffee on the land. Armando's wife and oldest son Mauricio to help him fertilize, plant, pick and wash the coffee. Mauricio has begun to take on more responsibility, bringing a new generation to spear-head the farm. Bourbon, typica, pache and catuai varieties are grown up to 1900 meters above sea level under shade trees, including the sauco (elderberry tree) after which this lot is named for.

Brew Recipe:

We use 18 grams of ground coffee and 306 grams of final water at 206 degrees F. We make three pours. The first one of 50 grams, we wait 30 seconds and we make two pours of 128 grams in a total time of 2 minutes 45 seconds.
