XO is our signature blend. The intention of this coffee is to highlight the delicate, sweet, and floral notes that can be found in coffee. It has been our goal to create a blend that can stay true to that flavor profile while also being able to hold up to milk when being served in a latte. After lots and lots of fine tuning we are proud to introduce you to our signature blend.
Brew Recipe:
We use 18 grams of ground coffee and 306 grams of final water at 206 degrees F. We make three pours. The first one of 50 grams, we wait 30 seconds and we make two pours of 128 grams in a total time of 2 minutes 45 seconds.
